Chai Recipes
Iced Chai
- Make up the chai mix with milk and sweeten whilst hot,
- Stir occasionally to ensure sweetner has dissolved.
- Wait until cool strain and refrigerate,
- Add icecream or iceblocks and serve
Chai Smoothies
- Make up chai mix sweeten whilst hot stirring to ensure it dissolves.
- Wait until cool, strain and refrigerate.
- Add chai mix to blender with banana, yogurt to taste.
Hot Chai Nightcaps
- Make chai as directed and add a shot of liqueur
Mulled Chai, makes 3 litres,
- Add 6 dessertspoons of chai mix to 1 litre of water and bring to the boil.
- Slice one orange into rounds and add.
- Remove from the heat and stand for 5mins.
- Strain and add to 1 litre of ginger wine and 1 litre of apple juice heat and serve warm.
Mocha Chai Cake, vegan
- In a bowl add 1 kg mixed dried fruit and 2 cups of hot chai made as per directions
- Mix together and leave until warm.
- Add 250gm chopped dark vegan chocolate and 2 cups of SR Flour to above mix
- Stir well and bake for 45mins at 180c
Rawsome Chai
Soak 1 tsp Holy Cow Chai in enough agave syrup/maple syrup/honey to cover and leave overnight
You need a high powered blender ie BioChef, Vitamix or Blendtec for this recipe
- Place the chai in the blender and add 1 banana
- Handful of cranberries ( or any berries)
- 2 medjool dates
- 300ml nut milk
- 200ml water
- Blend for a minute or two
- Strain off residue
- Makes 2 big rawsome chai smoothies
Chai Ice Cream
Ingredients
- 2 cups of cream
- 1 cup of milk
- 1/2 cup of sugar
- 6 dst spoons of Holy Cow chai mix
- 1 vanilla bean
- 5 egg yolks
Method
- Place 1 cup of cream, milk, sugar, chai mix and scraped out vanilla seeds in a saucepan and heat,
- turn off just before it boils. Cover and leave to steep for at least 30 minutes then strain.
- Whisk the egg yolks in a bowl and add cream/chai mix.
- Return the mix to a saucepan and whisk over a low heat until it reaches 77 C - 79 C, or until the mixture thickens and coats the back of a spoon.
- Remove from heat immediately and pour into a bowl containing the remaining 1 cup of cream and the scraped out vanilla pod. Allow to cool, cover, then place in the fridge overnight.
- Remove the vanilla pod and mix in an ice cream machine until ready.
- Freeze until desired.
Vegan Ice Cream
Ingredients
- 1 1/2 cups of almonds
- 6 dst spoons Holy Cow chai mix
- 1 vanilla bean
- 2 bananas
- 4 medjool dates - pitted
Method
- Soak almonds overnight.
- Place in blender with 2 cups of water and blend. Strain through a muslin cloth to extract milk - twist hard to remove all liquid.
- Place in a saucepan and heat, remove from heat just before it begins to boil.
- Add chai mix and scraped vanilla seeds and steep until cool.
- Strain.
- Blend banana and dates with the chai almond milk.
- Add the vanilla pod and refrigerate overnight.
- Remove vanilla pod before churning in an ice cream machine.
- Refreeze until desired.
Plum Chai Fruit Leathers
- 8 large plums – roughly chopped and deseeded.
- 1 Tbs honey.
- 1 banana sliced.
- 2 cups chai.
- Boil all ingredients except honey on medium heat to evaporate liquid.
- Bend to sauce consistency.
- Return to heat add honey and reduce for another 15 mins.
- Dehydrate via dehydrator at 57c for 4-6 hours.
- Or via your oven on parchment paper at 170c for 6 hours.
